Zucchini and apples....

 
We are abundantly blessed in the apple and zucchini department at the moment, so much so that we gave some apples (and tried to give zucchini) to the wife of the guy who came and bought Jacob's Rover this evening.  :) 
 

The guys loaded up another load of scrap-metal this afternoon.  There were a lot of loud noises out by the shop because of that project.
 
My mom and I shredded/blanched/froze zucchini and turned apples into sauce and juice.  Then, we made Zucchini Fritters for supper, with a baked Apple Walnut dish for dessert.
 
Guess what?  There was no rain today and we even saw a glimmer or two of sunshine!!  We ladies washed all our bedding/comforters and hung them out in the strong wind to dry, so now, even with my windows closed to keep out the very cool breeze, my room smells like the great outdoors.
Awwwwwwww....

  2. "Amen!" :) You know, if you come over our way, you're more than welcome to come at meal time and have some yummy things! Of course, you may want to lock your doors on your vehicle though so you don't go home with a truckful of zucchini... ;)

Hmmm...sounds like a plan....:> Hahahahaha, yeah...we are getting PLENTY of zucchini ourselves...ya know I don't get why we don't just plant ONE seed for ONE plant of zucchini, and that ONE seed/plant would probably provide plenty on its own, WITHOUT help from other plants!!!! ;) Laughing out loud, Emmy

  4. That is exactly what I thought I'd do. I planted three seeds of zucchini and three cucumber. I got exactly one zucchini plant which has provided plenty (along with a few early ones from my mom). One zucchini turned out a foot and a half long while we were on vacation! Unfortunately we got no cucumber, but a couple of us don't like cucumber, so I'm not complaining.

    I just heard about blanching from my cousin Greg, and his wife Cherry gave me the whole run-down on blanching when they brought 14 crookneck squash for me to take home. I had never had croockneck, and we thought it was even better than zucchini when we tried some for supper last night! ~Kristi

  5. We have 2 large zucchini plants and 2 small ones. I think it will be enough!! :) We have crookneck squash too, Kristi, but my mom is the only one who thinks that it's as good as zucchini. Yes, blanching (and cooling the food quickly in very icy cold water) is the best thing to do before freezing. A book that we have found to be a great blessing over the years is called "Preserving Summer's Bounty".

I just reserved a copy (from another library) of Preserving Summer's Bounty. I was surprised they had it in our library system! I'm real happy that I won't have to go searching the internet and can use the same procedure that you do. ~Kristi

  7. It all depends on when I see them come in, cousin Kristi! :) I'm SO glad to hear you can get that book from the library! I'm sure there are many other good books like that out there, but it's one my mom bought years ago and it has answered many of our questions. We keep it as a reference book. If you really like it, maybe you can request a copy for a birthday gift or something!
